Chocolate Guiness Cake

This is a favourite recipe of both myself and Helen. Neither of us are terribly good at following recipes accurately so this was developed by failing to read the recipe. But it is fantastic! Always a crowd pleaser! However I must say it is not one of my healthier recipes.

Preparation 15 mins. Cooking time 1 hr. Serves heaps.

Cake Ingredients
1 bottle or can of Guinness 440mls
1 cup of butter
75g cocoa
400g caster sugar
150ml pottle of light sour cream (that’s the healthy bit ha ha)
2 eggs
1 tablespoon vanilla extract
275g flour
2 tsp of baking soda

Icing
400g (approx 1 3/4 pottles) cream cheese
120g icing sugar

Directions

  1. Pour the Guinness into a large pot and add the butter. Gently heat until the butter is melted. Remove from the heat.
  2. Beat in cocoa and sugar.
  3. In a large bowl beat the sour cream, eggs and vanilla. Pour the Guinness mix in.
  4. Beat in flour and baking soda.
  5. Pour into lined 9 inch spring tin.
  6. Bake for 45 mins to 1 hr at 180˚C. Leave to cool. The cake should be quite damp and heavy.
  7. Make the icing by beating the icing sugar and cream cheese. Spread on top to make it look like an enormous Guinness.

    Guiness cake is the easiest cake to make and most delicious moist and scrumptious treat. Made for friend’s 50th birthday cake and decorated with green shamrocks. It was a hit at the party…everyone wants the recipe! PS got a better result cooking second cake for 60 minutes. Oven off door open allowing cake to cool. Thanks for the non-calorie conscious dessert….
