Chilli pork with Asian greens

Ingredients

½ Tbsp olive oil

2 large onions finely sliced

1-2 cloves of garlic

1 ½ Tbsp fresh ginger (grated or minced)

2-4 red chillies finely chopped (to taste)

500g pork (beef, or chicken also work well)

1 cup white wine

¼ cup salt reduced soy sauce

¾ oxo cube with 1 cup water (or 1 cup beef stock)

2 Tbsp palm sugar or brown sugar

¼ cup fresh coriander chopped

 

1. Cook the oil, onions, garlic, ginger, and chillies until the onions are soft.

2. Add pork and cook until sealed.

3. Add wine, soy sauce, oxo cube and water (or stock) and sugar.

4. Simmer for approx 50 mins until pork tender.

5. Add more water as it starts to thicken.

6. Stir through coriander just before serving.

 

Serve with rice and stemmed Asian greens such as bok choy, spinach, green beans or a combination or any green veges.
