Asparagus, pea and ricotta salad
Preparation: 15 mins, Serves: 4-6
Ingredients
5-6 Asparagus stalks
¾ cup frozen peas
½ cup ricotta
1 tbsp chopped mint
Large handful of rocket or baby spinach
Dressing
2 tbsp olive oil
1 tbsp balsamic vinegar
Simmer the asparagus and frozen peas for 2-3 min until tender. Drain and cool. Toss all ingredients together.



This looks yummy and easy, definitely going to try it!
This looks very simple for bbq’s and the like. Will try this long weekend!
